Easy Cookies and Cream Brownies are a perfect reason this season for friends and family to get together, bake, and be thankful for our blessings along with these delicious brownies.
This week my daughter is off of school and we plan to fire up the oven and create lots of memories and wonderful dessert recipes.
Easy Cookies and Cream Brownies
To start off with we are making some Cookies and Cream Brownies. We love brownies around here. We make them for school events and there are so many flavors of sandwich cookies that you can change them up or add different items from WinCo Foods where they have lots of bulk ingredients for all your baking needs. This is where I got some ideas to make some Chex Mix for us to snack on while we are baking and getting ready for the holidays.
I started with a cake mix but we didn’t want a cake so we decided brownies are easy to eat and are oh so good. Even though I usually bake from scratch, I always keep some boxes of mixes in the pantry. You never know when you need something quick.
While we were at the store, we also picked up some Corn Chex Mix and some fun snack items from the bulk bins. When you are cooking during the holidays you want to snack on something that won’t fill you up. I love the Chex snack mix because you get a little salty and a little sweet and you can virtually put anything you want into it and it will still be good.
Easy Corn Chex Snack Mix
We love to have some of this snack mix on hand and it is simple to put together. You can fill a holiday bowl and nibble while you are cooking. It is also a great after-school snack.
1 Cup Corn Chex Cereal
1 Cup Popped Popcorn
1/2 Cup Chocolate Hard Shell Candies
Pretzels
Peanuts
Easy Cookies and Cream Brownies
Ingredients
- 1 box Betty Crocker Super Moist Chocolate Cake Mix
- 3/4 cup vegetable oil
- 2 large eggs
- 2 cups of powdered sugar
- 1/2 stick softened butter
- 1 Tablespoon milk
- 1 teaspoon of Vanilla Extract
- 8 sandwich cookies
- White Chocolate Chips
- Semi Sweet Chocolate Chips.
Instructions
- Heat Oven to 350 degrees.
- Spray 9 X 13 Rectangular Pan with Cooking Spray.
- In Mixer, beat, cake mix, oil and eggs. Spread into pan. Do not use box directions.
- Bake 25 minutes and set aside to cool completely.
- In Medium Bowl, mix powdered sugar, softened butter, milk, and vanilla and spread over brownies.
- Place cookies in a baggie and hit with the bottom of a cup, or rolling pin. Sprinkle with Chopped Cookies, slightly press into frosting.
- Place Chips in separate bags and heat in microwave for 30 seconds at a time, until melted.
- Drizzle each flavor over sandwich cookies.
- Refrigerate before cutting.
