Red White Blue Salad

This Red, White, and Blue salad combines fresh berries, jicama, and a jalepeno bite for your next barbecue.

Ingredients

  • 1 cup fresh organic blueberries
  • 1 cup diced strawberries
  • 1 cup raspberries
  • 1 cup diced jicama
  • 1/3 cup chopped cilantro
  • 1/4 cup chopped red onion
  • 2 Tablespoons chopped jalapeno pepper stemmed and seeded
  • Juice of 1 lime
  • Salt
  • Crackers or Tortilla Chips

Instructions

  • In a medium bowl, combine all chopped ingredients except the salt. Slowly add salt to taste.
  • Chill for 1 hour. Serve with crackers or tortilla chips.

Notes

This is red white and blue for summer holidays, but you can mix it up however you like. No jicama? Use apples. Bananas would also be a "white" food. If using bananas, add some lime juice to them before placing in the bowl.
