Mini Peach Cobblers

Mini Peach Cobblers made in mason jars are the perfect individual size portion dessert made with fresh or frozen peaches and blueberries and are full of flavor.

Ingredients

  • 16 oz peaches chopped
  • 1 - 2 cups blueberries
  • 1 Tablespoon lemon juice
  • 1 cup self rising flour If you don't have self rising, use all purpose and add 1/2 ts of baking powder
  • 1 cup brown sugar
  • 1/2 stick Cold Butter
  • 2 teaspoons Cinnamon
  • Whipping Cream or whipped cream optional for topping

Instructions

  • Preheat oven to 350 degrees.
  • Spray the inside of 6 - 8 oz jars with cooking spray, and place in a baking pan.
  • Add the lemon juice to the fruit and stir until coated.
  • Place the Peaches and or Blueberries in the jars equally.
  • Using a pastry blender, blend butter into sugar and flour until it resembles coarse crumbles. 
  • Mix all the dry ingredients and sprinkle on the top of fruit.
  • Bake for 25 minutes.
  • Mix up whipping cream and place a dollop on top and add an (optional) sprinkle of cinnamon on top and mint sprig if desired. 

Notes

To make this recipe gluten free you can substitute self-rising flour with gluten free flour and add 1/2 ts of salt and 1/2 ts of Xanthan gum.
