Earl Grey Cookies
Earl Grey Shortbread Cookies are buttery and delicate. They are made with loose-leaf Earl Grey tea leaves which help balance the richness of these delightful cookies. Serve them with a cup of hot tea or a cup of coffee.

- 2 Sticks Butter Unsalted
- 2 Tablespoons Earl Grey Tea Loose Leaf
- 1/2 Teaspoon Vanilla Extract
- 1/2 Cup Powdered Sugar
- 2 Cups All Purpose Flour
- 1/2 Teaspoon Salt
Optional Drizzle
- 1 Tablespoon Lemon Juice
- 1/2 Cup Powdered Sugar
Add 2 TBS of Loose Leaf Earl Grey Tea (or 4 teabags opened up) to softened butter and let sit for up to two hours. This gives the flavorsa chance to infuse and blend
Cream Butter, Vanilla Extract and Powdered Sugar in Electric Mixer.
Add Flour and Salt and Beat until dough forms a ball.
Form into a disk and wrap in cellophane.
Chill in the refrigerator for 15 minutes
Remove Dough and roll out to 1/4" thickness. Use a 2" round cutter
Place on a Cookie Sheet with parchment paper
Preheat oven to 350 degrees
Place Cookie Tray in Refrigerator for an additional 15 minutes. This lets the butter chill so there is less spreading during baking.
Bake 15-17 minutes and check for doneness
Let cookies cool on a cooling rack for 30 minutes.
Optional: Make the lemon drizzle (by mixing two ingredients to desired consistency) and either dip half the cookie into it, or drizzleback and forth.
- Loose Leaf Tea will give the cookies a stronger taste. Using Tea Bags is very subtle.
- Leaving the tea to infuse in the butter longer will give it a better flavor.
- You can leave out the Vanilla Extract if you choose. It's in there for Vanilla Lovers.
- If making lemon drizzle start with a 1/2 cup of powdered sugar and a TB of Lemon and adjust for consistency and taste.
- Chilling the cookies in between the steps before baking will ensure the cookies don't spread and keep their shape.
Cookies are done when they are pale on the top and have a light golden color on the bottom
