    Watermelon Feta and Arugula Salad

    Watermelon, Feta, and Arugula Salad is a refreshing summer salad, made with watermelon, blueberries, cucumbers, peppery arugula, and feta cheese.

    Why you’ll love this salad

    All the taste of summer in this eye-pleasing salad. This recipe can be made in under 20 minutes. You can make the Vinaigrette recipe provided or use your own store-bought balsamic dressing. You can add a few almond slices for some extra flavor and texture.

    Ingredients for Watermelon Feta Salad.

    Ingredients

    • Watermelon: Use Seedless Watermelon for this recipe
    • Fresh blueberries: Use fresh blueberries for a beautiful eye pleasing salad
    • Feta cheese: Use a block of fresh feta cheese and break it apart with your hands.
    • Cucumber: Chopped cucumber gives this salad a nice crunch and pairs well with the other ingredients.
    • Arugula: Fresh arugula is tart and peppery and tastes delicious in this salad. You can substitute with baby spinach if you prefer.
    Vinaigrette Dressing for Arugula Salad

    Vinaigrette

    • Olive oil
    • Limes 
    • White distilled vinegar
    • Honey
    • Garlic
    • Salt
    • Black Pepper 
    • Fresh mint 

    Instructions

    1. In a large serving bowl or platter, layer or arrange the watermelon, blueberries, feta, cucumber, and arugula as desired. 
    2. Place the dressing ingredients into a jar or other container with a lid and shake vigorously to combine. 
    3. Pour the dressing over the salad and toss it together.

    Can I substitute the greens?

    Yes, you can use romaine, spinach, or butter lettuce if you prefer

    What Does Arugula Taste Like?

    The Mediterranean plant has a distinctive peppery flavor, and the thin stalks resemble dandelion greens.

    Can you make this salad ahead of time?

    Yes, you can make this salad up to 24 hours in advance. I would add the watermelon at the last minute because of the water content. Do not add dressing. Place in a Tupperware bowl or cover a glass bowl.

    What other ingredients would be good to add?

    Thin-sliced red onions, sliced almonds, or walnuts. Also avocado would be good.

    Ingredients  

    • 2 Cups Watermelon Fresh and cubed
    • 1/2 Cup Blueberries Fresh
    • 4 Ounces Feta Cheese Cubed or Crumbled
    • 1/2 Cup Cucumber Diced
    • 4 Cups Arugula

    Vinaigrette

    • 1/4 Cup Olive Oil
    • 2 Limes Juice Only
    • 1 Tablespoon White Vinegar
    • 2 Tablespoons Honey
    • 1/2 Teaspoon Garlic Minced
    • 1/4 Teaspoon Salt
    • 1/4 Teaspoon Black Pepper
    • 1 Tablespoon Mint Fresh and Chopped

    Instructions

    • In a large serving bowl, or platter, layer or arrange the watermelon, blueberries, feta, cucumber, and arugula.
    • Place the dressing ingredients into a jar or other container with a lid and shake vigorously to combine.
    • Pour the dressing over the salad and toss together, or serve on the side.

    Notes

    • Add finely diced red onion or chopped fresh basil to the vinaigrette for more depth of flavor.
    • If preferred, substitute red wine vinegar for the white vinegar in the dressing. 
    • If desired, skip the vinaigrette and dress with balsamic vinegar or bring balsamic and honey to a boil together, then reduce heat to a simmer until thickened. Cool completely before drizzling over the salad, then serve.
