- 1/2 Cup Blueberries Fresh
- 4 Ounces Feta Cheese Cubed or Crumbled
- 1/2 Cup Cucumber Diced
- 4 Cups Arugula
Vinaigrette
- 1/4 Cup Olive Oil
- 2 Limes Juice Only
- 1 Tablespoon White Vinegar
- 2 Tablespoons Honey
- 1/2 Teaspoon Garlic Minced
- 1/4 Teaspoon Salt
- 1/4 Teaspoon Black Pepper
- 1 Tablespoon Mint Fresh and Chopped
