    This Blueberry Scones recipe is a Starbucks copycat and is even better than the original version. It’s made with fresh ingredients including sugar, heavy cream, and cinnamon.     Copycat Starbucks Blueberry Scones are perfect for breakfast or with a hot cup of tea. The sweetness of these scones deliciously complements a cup of Chai or Earl Grey.

    Making scones is so much easier than you may think. If you’ve never made them before, you’ll be pleasantly surprised by this fact after you’ve tried it. Once you mix all the ingredients, you will have a soft, lumpy, beautiful dough. The butter needs to be cold when it’s mixed in and baked (which means the dough will be lumpy). This will help the scones be airy and fluffy after they’re cooked.

    Ingredients

    Here are the ingredients you need to make these amazing scones.

    • All-purpose flour
    • Baking powder
    • Sugar
    • Egg
    • Unsalted Butter, cold, cut into pieces
    • Salt
    • Vanilla extract
    • Heavy whipping cream
    • Blueberries
    • Cinnamon
    • FOR TOPPING
    • Cinnamon
    • Sugar

    Directions

    Preheat the oven.
    Sift the dry ingredients together including the flour, salt, sugar, baking powder, and cinnamon.


    Next, cut in the cold butter using a dough cutter or two forks.


    Mix in the egg, heavy cream, and vanilla extract.
    Fold in the fresh blueberries that have been dusted with flour (or just push frozen ones in)


    Place them on the baking sheet topped with parchment paper.


    Pat the dough out into a round shape and cut it into 8 wedges, separate wedges a little, and sprinkle with the cinnamon sugar topping


    Bake for 15 minutes until they golden brown. Make sure the center is cooked by inserting a toothpick. As soon as the toothpick comes out clean, they are cooked all the way through.

    Variations of this Blueberry Scones recipe

    If you’re looking to change things up a bit or don’t have all the ingredients listed for this recipe, you can still make great scones!

    You can use frozen blueberries if you don’t have fresh ones. Either way, be sure to toss them with a tablespoon of flour before mixing them in the dough to help keep the color from bleeding into the dough.

    Instead of using blueberries, you can substitute lemon zest, chocolate chips, tart cherries, or strawberries. You can also make them savory with bacon and cheddar cheese depending on your mood or the time of year.

    After baking the scones, you can keep them in an airtight container or large freezer bag on your counter for up to 3 days.

    You can store the scone dough before baking, wrapped tightly in plastic wrap, in the freezer for up to 3 months. Be sure to write what it is and the date on the outside, so you don’t forget.

    Ingredients  

    • 2 Cups All Purpose Flour
    • 2 Teaspoons Baking Powder
    • 6 Tablespoons Granulated Sugar
    • 1 Large Egg
    • 1/2 Cup Butter Unsalted
    • 1 Teaspoon Salt
    • 1 Tablespoon Vanilla Extract
    • 1/2 Cup Heavy Cream
    • 1/2 Cup Blueberries
    • 1 Teaspoon Ground Cinnamon

    Topping

    • 1 Teaspoon Ground Cinnamon
    • 1 Teaspoon Granulated Sugar

    Instructions

    • Preheat oven to 400 degrees
    • Sift dry ingredients togeher including flour, salt, sugar, baking powder, and cinnamon. Cut in the butter with pastry blender.
    • Mix in egg, cream and vanilla extract.
    • Fold in the blueberries gently that have been dusted with flour. You can also use frozen blueberries.
    • Fold into a ball and place on a baking sheet.
    • Pat into a disc and using a pizza cutter, cut into 8 slices.
    • Seperate wedges a little and sprinkle with cinnamon sugar mix.
    • Bake for 15 minutes until golden. Check for doneness in the center.

    Notes

    You can use a scone pan if preferred. 
    Add cream sparingly until you get a mixture that doesn’t separate.
