    Funfetti Cake Mix Cookies

    These Funfetti Cake Mix cookies will be the delight of the party or snacktime too. They start with a cake mix and add creamy butter and vanilla extract, then dipped in vanilla frosting with even more colorful sprinkles on top.

    Don’t sprinkles just make everything better? Remember when you were younger and you saw the box of donuts? Which one did you want? The one with sprinkles of course! It’s like an invitation saying pick me, pick me!

    That is why these cookies are so special. First, it starts with a box of cake mix, so there are fewer ingredients to play with. Then we add butter and vanilla extract which makes everything better and makes it tastes more like baked from scratch.

    Then we dip in Vanilla frosting and then add even more sprinkles so they are more appealing and “Oh So Delicious”! Try these cake mix cookies here also.

    Ingredients for Funfetti Cookies

    Ingredients

    • 15.25 Funfetti Cake Mix Box ( or Vanilla Cake Mix and Add Sprinkles)
    • Vegetable Oil
    • Butter
    • Eggs
    • Vanilla Extract
    • Can of Vanilla Frosting
    • Jimmies or Sprinkles

    Directions

    Preheat Oven to 325 degrees F. Line two cookies sheets with parchment paper

    In a large bowl, mix together by hand the cake mix, oil, melted butter, extract, and eggs. Stir with a wooden spoon, until combined. Don’t overmix.

    Using a 2 Tablespoon cookie scoop, drop cookies onto a cookie sheet. Keep 2 Inches apart.

    Bake for 11-13 Minutes or until the bottom edges start to turn golden. They may seem a little underbaked, but once the edges look a little crisp, then remove them from the oven and let cool for 10 minutes.

    In a small microwavable bowl, (that you can dip the cookie in) place the vanilla icing. Microwave at 50% power for 10 seconds and stir. Repeat one or two times. Don’t overheat or the frosting will separate.

    Dip the cookie halfway down into the melted icing. Lay on parchment paper or a drying rack and sprinkle with the candy sprinkles while the icing is still warm.

    Let the icing harden before serving.

    FAQs

    What if I can’t find the Funfetti Cake Mix?

    You can use a Vanilla Cake mix and add your own sprinkles or Jimmies.

    Why do my Cookies seem too hard?

    Don’t overbake even if they don’t seem baked completely. Follow the time listed and make sure your oven is calibrated to the right temp. They continue baking a minute or two after you remove from the oven.

    How do I store these cookies with frosting on them?

    I prefer to store in a large ziplock bag in the refrigerator. They only take a minute or two to warm up after you remove them from the refrigerator.

    Can I freeze them?

    Yes, you can freeze the cookie dough before you bake by scooping them into balls and freezing in a ziplock bag for up to two months. You can also freeze after baking by placing them in a container or ziplock bag.
